Why does the chart give grams by ingredient instead of one number?
Because a cup is a volume, not a weight, and every ingredient has its own density. A cup of flour is about 125 g, a cup of sugar about 200 g and a cup of butter about 227 g. A single “1 cup = X grams” figure would be wrong for most things, so the chart lists the common ones separately.
Does the chart fit on one page?
